Yalumba "The Octavius" has established a reputation as one of Australia's icon Shiraz Wines. In addition to being sourced from a number of very old vineyards in the Barossa, The Octavius is matured in Amercian oak 'octaves' of only 90 litres capacity. It is the only red wine in the world that is matured in such small barrels. The secret of the wine not becoming overpowered by the oak, is that the oak used is seasoned at Yalumba for eight years before the octaves are crafted. An outstanding Octavius. Very deep crimson colour, with deep crimson hue. Superb nose – wonderful aroma of ripe plum, vanilla and spice – a perfumed sniff, with a violet end note. The palate follows the nose, mouthfilling, explosive flavours of pronounced blackpepper, followed by layers of liquorice and plum. Fine grained, dry firmish tannins, but perfectly balanced, followed by a very long aftertaste of mocca, plum, blackpepper and spice.
