Grape Varieties:30% Corvina 30% Covinone 30% Rondinella 10% Molinara, Rossignola, Oseleta, Negara, Dindarella
Region:From the Monte Fontana vineyard in the Valpolicella Classico zone in Veneto.
Vinification: The grapes are harvested in October and are dried on racks until mid January. They lose 30-40% of their weight and increase sugar concentration to about 27%. The wine is aged in oak for two years before being bottled.
Characteristics:The colour is an intense ruby red with a concentrated nose of sweet fruits, specifically raspberries and blackberries. The palate has elegance with a robust, well-balanced structure. Flavours of black cherries and forest berries dominate with a deliciously persistent palate.
Serve:Room temperature.
Try it with: Ideal with rich chocolate desserts, rich fruit puddings and tasty cheese.
