Of prime importance are the Seaview Winery’s access to premium cool climate grapes from a diversity of regions and a longstanding commitment to the traditional methode champenoise winemaking techniques. Extended bottle maturation on yeast lees ensures the result is a wine of great character and depth.

Made from a blend of Pinot Noir, Chardonnay, Pinot Meunier sourced from premium cool climate fruit from districts including Gumeracha, Adelaide Hills and the Coonawarra in South Australia and Tooma and Tumbarumba in the NSW alps. Secondary fermentation in the bottle with 24 months bottle maturation on yeast lees and disgorged in the methode champenoise tradition.This elegant sparkling wine exhibits a salmon tint reflecting the predominance of pinot in the blend. The fine bead produces a persistent mousse at the rim of the glass. The complex, champagne like aroma reveals pinot fruit and bready yeast characters derived from 2 years maturation on yeast lees. The richly flavoured palate has developed toasty pinot, integrated yeast autolysis and a soft creamy texture. The finish is clean and crisp with lingering complex flavours. Drink now to 2006.
