A complex wine which has been developed using a variety of procedures in order to ensure an integrated, multi layered structure. Bright, deep straw colour. Excellent lifted nose with aromas of green tea, spicy oak, confectionary and vanilla. Totally opposite the kind of aroma one finds in Hunter Valley Semillon, and its hardly surprising, given that 29% of the wine was fermented on wild yeast, with 6 months on lees in new American and French oak. Mouthfilling palate structure – flavours of toasted oak, spice, vanilla, citrus and pear. Creamy texture. Clean crisp acid finish, with long aftertaste of spice, cinnamon, vanilla and oak. Cellar 2-3 years.
