The Delegat's Reserve wines are fermented using neutral yeasts, just as are their Oyster Bay counter parts. Fermentation takes place at relatively cool temperatures of between 12-15C and the wine spends 12 months on yeast lees contact in a combination of Allier, Vosges and Troncais French Oak.Bright straw colour. Complex yeast lees, biscuit nose. The palate displays considerable complexity with biscuit nutty fino flavours dominant, very long with a slightly aniseed end palate.

Bright pale brassy gold colour. The nose displays complex aroma of biscuit, cashew with distinct yeast lees, barrel ferment overtones. Creamy texture. Spicy butterscotch, melon palate flavours good balance with soft acid finish. Cellar 2-3 years.
