This wine is made from a blend of Pinot Noir and Chardonnay and has spent 3 years on lees. The grapes were hand picked and whole punch pressed. Bright straw colour. The mousse is persistent but the bead is relatively large and coarse. Aroma of biscuit and nougat, with end notes of winter strawberries and yeast lees. The palate displays a creamy texture, with flavours of yeast lees and nougat emerging. A refined style. Very good length. Soft acid finish followed by an aftertaste of yeast, citrus and biscuit.
