A magnificent Australian sparkling wine.
Kept on lees since 1996 and only disgorged in September 2002. The six years of lees contact has resulted in a superb, complex sparkling. The wine displays deep straw colour with pale gold hue. The bead is very fine, with creamy white mousse and excellent persistence. This is the sort of nose that one longs for – layers of complexity quickly build up over time, with a very distinctive toasted bread top note, followed by a strong yeast lees end note with just a hint of grapefruit emerging. The palate has a super creamy texture, with flavours of biscuit, cashews and yeast lees emerging, covering a background layer of honey and grapefruit. Crisp acid finish, followed by a long aftertaste of grapefruit and honeycomb.
