Grape variety: 100% Nebbiolo
Region: The vineyard of Bricco Asili in the commune of Barbaresco in the northern region of Piemonte.
Production: Fermentation is in steel tanks where the temperature is carefully controlled so that it can be lowered when it goes above 28-29ºC. Following there is a brief maceration after which malolactic fermentation is done for 1 month. 50% of the wine is aged for 2 years in large oak casks as required by law while the remaining 50% is kept in small 300litre barrels.
Characteristics: A complex bouquet with touches of wild roses, violets and liquorice. This wine is dry in flavour on the palate. Recommended to be drunk after 3 to 15 years.
Serve: at room temperature and double decant.
Try With: Osso Buco, porcini and Polenta.
