Grape Varieties: 80% Malvasia and 20%Trebbiano
Region: In the production zone of Colli Aretini surrounding the ancient medieval town of Galatrona.
Production: The best grapes from the best vines are used to produce the Vin Santo. Picking occurs in late October when the bunches are put in small crates and are placed in a dry well ventilated place until the following February, March. Sugar concentration increases over this time. After the drying process is complete, the wines go through a further rigorous selection choosing only the best bunches to be pressed in the pneumatic press. Fermentation takes place over five to seven years with the must left to maderise under the rafters in small barrels, exposed to varying temperatures. Only the best barrels are bottled, resting in the cellar before release.
Characteristics: A brilliant tawny amber colour. The perfume is intense with hints of mature and dried fruit. It has a medium sweet palate similar to a medium sherry. The palate is soft, toasty and nutty with an appealing warm roundness and excellent structure. It finishes dry, clean and long.
Serve: 15 – 18° C
Try it with: Traditionally served with dry Tuscan almond biscuits but also nice with Christmas pudding, cheese and pastries.
