Seppelt has had more experience with this unique Australian wine style than any other winemaker in the country. Although there are no precise records, we believe that the winery was experimenting with sparkling red wines as far back as the 1890?s when French winemaker, Charles Pierlot was employed by Hans Irvine. The 1994 Seppelt Original Sparkling Shiraz was made in the traditional sparkling burgundy style from ripe, flavoursome Shiraz and Cabernet Sauvignon grapes grown predominantly in the Barossa Valley, Langhorne Creek and Coonawarra districts. The wine was matured in large oak vats for 12 months, followed by secondary fermentation in the bottle and maturation on yeast lees for 18 months. Deep crimson-red colour with a fine mousse. Rich, ripe, spicy fruit and plum, mulberry characters dominate the nose, together with a hint of truffles and integrated yeast complexity. The palate has abundant ripe, spicy fruit flavours with pepper and plum nuances, complimented by soft tannins and yeast lees characters. The sweet wild-berry fruit is well balanced by clean acidity and soft oak which contribute to the structure. A rich full flavoured wine with good length and clean dry finish.
