Seppelt has had more experience with this unique Australian wine style than any other winemaker in the country. The 1993 Seppelt Original Sparkling Shiraz was made in the traditional sparkling burgundy style from ripe Shiraz grapes grown predominantly in the Padthaway, Barossa Valley and Coonawarra districts. Inclusion of a small proportion of aged Reserve Wine has contributed an extra dimension of complexity to the wine.The wine was matured in large oak vats for 16 months, followed by secondary fermentation in the bottle and maturation on yeast lees for 18 months.The colour is deep crimson-red with a fine mousse. Rich, ripe, spicy Shiraz and plum mulberry aromas dominate the nose with a hint of truffles and integrated yeast complexity. The palate has abundant ripe, spicy fruit flavours with pepper and plum flavours to the fore. The sweet wild-berry fruit is balanced by natural clean acidity and a soft tannin structure. Good length and clean dry finish - perhaps just a little sweeter than previous vintages. Cellar up to 5 years or drink now.
