Bin 389 combines the elegance of Cabernet Sauvignon with the richness of Shiraz and demonstrates the traditional Penfolds' trademark - perfect balance between fruit and oak, to produce a wine with rich aromas and flavours, character and longevity. All these features are hallmarks of the Bin 389 style, which combine to give the wine its reputation for quality and value for money.
This wine was barrel fermented in American oak casks, followed by 16 months oak maturation.
The 1991 Penfolds Cabernet Shiraz Bin 389 shows an excellent depth of crimson-red hues. An attractive bouquet of ripe berry fruit supported by the complex aroma of vanillin oak and cedary barrel fermentation characters, with chocolate and mint-like Cabernet fruit dominating the light, peppery Shiraz at this stage of development. The palate is full, rich and flavoursome showing a symphony of soft integrated fruit and oak flavours, held within a tight structure by a firm tannin finish. The rich complexity of flavours can also be attributed to the exceptional quality grapes sourced from some of the finest vineyards in South Australia. Drink between now and 2010. Alc/Vol:13.5%
