Seppelt Show Sparkling Shiraz has been made at Seppelt’s Great Western Winery in Victoria for over a century. While there are other sparkling red wines made around the world, none bear resemblance to this Shiraz-based wine style made in the Méthode Champenoise tradition. Even within Australia, the Seppelt Show Sparkling Shiraz is the only one made using the same traditional methods of 100 years ago. Importantly, it is the ageing process that contributes significantly to the unique and special qualities of Show Sparkling Shiraz, resulting in superb fruit, oak and yeast integration with magnificent, complex maturation characters.
Made from small quantities of single vineyard fruit, the 1990 Seppelt Show Sparkling Shiraz is a classic example of this famous Australian style, which will continue to improve with careful cellaring. The wine was matured in oak for 18 months and has then undergone secondary fermentation in the bottle for six and a half years and has been disgorged in the méthode champenoise tradition.
Deep rich plum in colour emerging brick red at the glass rim. The aroma is a rich and complex mix of raspberry Shiraz fruit with overtones of pepper and spice. Extended maturation on lees has developed earthy, leathery characteristic of great complexity which will be enhanced by further bottle age.The palate is rich, round and soft with blackcurrant Shiraz fruit flavours, typical of the Great Western vineyard, and a long, velvety dry finish. The wine displays finesse and perfect balance, softened and integrated by extended bottle maturation on yeast lees.This wine will drink superbly now however a further 10 – 15 years will reach optimum maturity with careful cellaring. It can be enjoyed with many facets of a meal – pate, game, cheese or desserts and especially with Christmas turkey or plum pudding. 13.5% alcohol volume.
