3.10 Glossary of Wine Tasting Terms

The variation of descriptors that are used by various wine writers can create a great deal of confusion. Dr Bryce Rankine [pictured above] is one of one of Australia's leading wine Academics, and is responsible for creating this Glossary of Wine Tasting Terms that is being presented in association with Vintage School. We consider Dr Bryce Rankine's Wine Glossary as the benchmark, and thus encourage wine lovers to use these definitions in their notes and discussions on the smell and taste of wine.

Belonging to a Wine and Food Club enables many people to enjoy and appreciate wines in convivial company. A problem associated with this is being required to speak about a wine to one's peers, and groping for the words which accurately convey one's palate impressions. Communication in wine tasting depends on just this using words which convey the subjective nose and palate impression of the wine. In order that one wine tasted by several tasters should be reported in the same way, it is necessary for the tasters to use the same words for the impression which the wine creates.
Accordingly, at the request of the Wine and Food Society in Australia, I have compiled the following tasting terms which now constitute the Society's official list of tasting terms. Some foreign terms which have become part of Australian wine nomenclature are also included. Extensive lists of tasting terms exist, particularly in the French language, and various overseas lists of tasting terms contain a preponderance of French terms. Some of these do not have precise Australian and New Zealand counterparts and are not used in these countries for serious tasting. For example, the often-used French term 'souple' does not mean 'supple' or 'pliant', as the dictionary would indicate, but 'smooth' or 'harmonious'.
Where possible, terms have been quantified by using the results of threshold taste measurements. Similarly, particular chemical constituents of wine are listed against certain of the tasting terms, together with legal maximum limits where appropriate. The description has been augmented by indicating whether the particular term relates to sight (appearance of the wine), smell (aroma and bouquet), and/or taste, as indicated:
S = sight
Sm = smell
T = taste
aperitif (T) A French term for appetiser, taken before meals to stimulate the appetite, e.g. dry sherry, vermouth, Champagne and, surprisingly, Sauternes.
astringency (T) Detected by a puckering, tactile sensation in the mouth due to high tannin content (absorbed from the skins and seeds); sometimes indicating that the (red) wine will be long-lived. Harsh, rough and tannic are related terms.
baume An old French term used to indicate dissolved solids (mainly sugar) in wine and grape juice. One degree Baume is equivalent to 1.8 per cent sugar and by fermentation converts to approximately 1 per cent alcohol by volume in a dry wine made from mature grapes; thus grapes picked at 11 Baume will on fermentation produce approximately 11 per cent alcohol by volume.
big (T) A tasting term - usually excessive body, often fruity and refers to high extract content.
body (T) Consistency, thickness or substance of the wine. Refers to extract content - full-bodied wines are more alcoholic than wines less so.
brut (T) A French term describing the driest classification of Champagne, containing usually less than 0.5 per cent sugar. Increasing degrees of sweetness are extra-sec, sec and demi-sec. Originally brut Champagne was unsweetened.
character (Sm, T) Combination of vinosity, balance and style; refers more precisely to the style of wine, e.g. port or sherry character.
dry (T) Denotes absence of sugar and opposite of sweet. Dry wines contain less than 0.2 per cent sugar, but wines containing up to about 0.5 per cent usually still taste dry.
fruity (Sm, T) The pleasant aromatic taste of a young wine with strong varietal character. The taste sensation derived from a combination of sugar, acid and grape flavour.
green (T) Term applied to a young wine which is unbalanced because of excess acid (largely malic) and made from immature grapes. Can also refer to the greenish colour of certain young white wines, due to chlorophyll from the grapes.
lees (Sm, T) The odour of wine stored too long on the lees or sediment deposited after fermentation; also solids deposited during racking and fining.
oxidised (S, Sm, T) A wine which has been exposed to oxygen, resulting in loss of flavour and development of coarseness. Oxidised wines usually contain higher levels of acetaldehyde.

A Magnificent Synergy Of First Growth Chateau Lafite Rothschild's Winemaking Expertise And Argentina's Unique Terroir.
Amancaya is the Native Indian name of a flower from the Mendoza area of the Andes. Excellent spring and summer growing conditions heralded the start of the 2006 Vintage, with windy conditions producing a positive outcome for the quality of the grapes. The Malbec yields were reduced as the result of a December hail storm. This wine has been made by Domaines Barons de Rothschild (Lafite) in association with Nicholas Catena. The blend is composed of 50% Malbec and 50% Cabernet Sauvignon. This is a most impressive red. Spectacular colour, opaque black purple colour with black purple hue and paint like cling to the glass walls. Top note of blackcurrant followed by black cherry, toasted oak, liquorice, spice and truffle. Mouthfilling palate – with flavours of spice, inky cherry, earth, blackcurrant and black cherry over a toasted oak background. Excellent weight and mouthfeel. Fine grained tannins, perfect balance and very long aftertaste. Outstanding value for money. Cellar 4 - 5 years (2012 - 2013) Alc/Vol: 14% |

Despite producing some of the finest red wines in Australia, few Australian's will have ever tasted the superb Reds that come out of a collection of old vine vineyards under the 'Clarendon Hills' label. A sub-district, Clarendon lies 10 km north east of the McLaren Vale township and is 250 metres higher above sea level. Consequently, the region picks 2-3 weeks later than McLaren Vale and generally enjoys longer, milder ripening conditions. Miniscule output and premium price ranges are secondary to this vineyard's apparent alienation, which is actually a self-imposed predicament that says more about owner-winemaker, Roman Bratasiuk, a former biochemist for the Australian government.
"Australians don't know what to do with my wines" he claims, "because they don't taste like everyone else's" which equates to approximately 98% of annual production being exported. Batasiuk's highly individualistic philosophy is certainly reflected in his wines which draw inspiration from the Classed Growths of Bordeaux and the great Shiraz and Grenache wines of the Rhone Valley. Also notable is a complete absence of American oak. "My Syrahs are not typically Australian; they are not over-laden with American oak and aren't jammy...In McLaren Vale there are many winemakers with academic degrees who are making recipe wines with American oak like those made by everyone else. I make wine intuitively, by instinct and imagination, not with a textbook." Bratasiuk has been described as brash, even arrogant. Regardless of one's attitude towards the man, there is no denying the extraordinary achievement that Clarendon Hills is: His wines possess an uncanny and universal ability to incite superlatives.
The 2006 vintage in Clarendon experienced a 'Mediterranean finish' to what was otherwise a typical Australian summer. The earlier onset of Autumnal coolness slowed ripening towards the end of the harvest season and enhanced colour development and skin thickness. All the Clarendon Hills wines are sourced from single vineyard sites from vines mostly around 85 years old. Hand picking occurs over several passes to ensure optimal ripeness of the fruit. Fermentation takes place using wild yeasts, followed by extended maceration. All the wines were aged for approximately 18 months in new and used, tight grained French oak barrels and finished without fining or filtration.

An outstanding Grenache
Very deep black crimson purple colour with black purple hue. Delightful perfumed nose of violet, raspberry, cherry, confectionary and spice. Explosive palate, full bodied, generous and 'joosy', totally encasing the mouth. Layers of liquorice, some spicy black pepper and ripe raspberry deliver outstanding length and depth. Velvet smooth tannins, with exceptionally long aftertaste of liquorice, raspberry and spice.
Other Reviews…
The 2006 Grenache Blewitt Springs is slightly reticent aromatically but has plenty of spicy cherry fruit on the palate. Firmly structured, it will evolve for 6-8 years but will be enjoyable in its youth.

Produced from low yielding, dry grown 83 year old vines, this wine was matured for 18 months within a hierarchy of 1-5 year old tightly grained French Oak. Very deep black purple colour – almost opaque with black purple hue. Superb lifted nose of violets, anise and spice. Explosive palate - mouthfilling with flavours of spice, black pepper, raspberry and plum concentrate. Fine, slightly dryish tannins – perfectly balanced. Explosive aftertaste.

The 2006 Grenache Romas Vineyard comes from the top triangle of the Blewitt Springs vineyard and provides only half the crop. It is the tightest and most structured of the Grenaches with a nose of toast, smoke, earth, black cherry and black raspberry. Full-bodied and very rich, this impeccably balanced wine conceals enough tannin to permit 8-10 years of evolution in bottle. Drink it through 2030.

| Very deep crimson colour with deep crimson hue. Perfumed nose of violets followed by blackberry, spice and cedar with nuances of new leather. The palate delivers superb length with layers of cedar, spice, and black pepper followed by liquorice, mocha and dark chocolate. Fine grained tannins, perfect balance. Exceptionally long aftertaste of spice, dark chocolate, blackberry and cedar – and just when one considers the aftertaste as being a final statement, a wave of lasting black and white pepper emerges.

| A Classic McLaren Vale Red
The colour of this wine is a total saturate of black purple with black purple hue. The nose is impressive with superb notes of violet, blackberry, ripe plum, dark cherries and vanilla. The palate is voluptuous – an explosion of flavour – black pepper, plum, dark cherries and spice over a smoky oak and liquorice background. Very fine tannins, perfect balance. Very long aftertaste of liquorice, spice and black pepper. Other Reviews… Velvety and terrifically focused, this delivers a laser beam of blueberry, boysenberry and plum, with hints of allspice and pepper that mingle effortlessly as they come shooting across a bed of very fine-grained tannins. Lingers enticingly for a long, long finish. | Yet another red showing spectacular black purple colour with black purple hue with excellent cling to the glass. Superb nose of violets, spice, ripe plum, black cherry, vanilla and liquorice. The palate is generous, again an abundance of ripe fruit flavours. Fine slightly dryish tannins – a touch chalky, but perfectly in balance. Flavours of ripe plum, cherry and spice are evident. Very long aftertaste of dark cherry, spice, plum and smoky oak.
Other Reviews… Rich, aromatic and powerfully focused. This is a big wine, but it's not at all heavy, showing amazing purity of fruit, with blackberry, plum and huckleberry fruit galore, all pointing toward the long, expressive finish. Tannins are present but well-integrated. Should go far. Best from 2010 through 2020. 94 points Wine Spectator Magazine The 2006 Syrah Moritz Vineyard has an enticing bouquet of wood smoke, pencil lead, lavender, bacon, blueberry and blackberry. The Hickinbotham Syrah was produced from low-medium yielding, dry grown 45 year old vines and the wine was matured in French oak for 18 months of which 85% was new oak. Totally opaque black purple colour with black purple hue and paint like cling to the glass. A superb saturate of colour. The nose is a pure sniffing pleasure, with violet top note followed by anise, liquorice, cedar and vanilla. The palate flavour profile is explosive – black and white pepper is overlaid with plum, liquorice and spice – totally mouthfilling, with outstanding length and depth. Fine dryish tannins, perfectly balanced – a touch more assertive than the other vineyards Syrah, but well structured. Exceptionally long aftertaste of plum, liquorice, spice and a hint of smoky oak.
Other Reviews… The 2006 Syrah Hickinbotham Vineyard delivers complex notes of pepper, spice box, bacon, blueberry and blackberry liqueur. A perfect expression of Shiraz, which once again places Astralis in the rarified company of Penfold's Grange and Henschke's Hill of Grace as one of Australia's most consistently outstanding and collectable wines
Totally opaque black purple colour with black purple hue and paint like cling to the glass. The nose on all Clarendon Hills Shiraz wines is impressive and it’s hard to imagine that one could get any more aromatics out of a wine, but Astralis does just that. Magnificent perfumed nose with aroma of violet, anise, liquorice and vanilla. The palate is a seamless essay of flavour infusions. Flavours of ripe plum, cherry, blackberry, vanilla and black pepper are fused – a palate of exceptional length and concentration. Velvet smooth tannins, followed by an extraordinarily long aftertaste of liquorice, confectionary, dark cherry, spice and smoky oak. Our scores will on pump Roman’s ego up a couple of notches – so be it. An extraordinary effort!
Other Reviews… A big wine, but amazingly supple, graceful and pure, offering cascades of wild blueberry, black cherry and plum fruit that play against spices such as cardamom, clove and black pepper. It's all seamlessly integrated with fine tannins and enough creamy oak to complete the picture. Syrah. Drink now through 2020. 98 points Wine Spectator Magazine
The 2006 Syrah Astralis Vineyard is more reticent than its peers. It reveals a splendid nose of toasty oak, crushed rock, Asian spices, violets, blackberry, and blueberry compote. It is tightly wound but impeccably balanced. Full-bodied, opulent, and intense, it will evolve for a minimum of a decade and provide pleasure through 2036. This wine was matured for 18 months in 75% brand new, tight-grained French Oak and 20% 1-3 year old oak. Opaque black purple colour with black purple hue, showing excellent cling. Perfumed nose – superb lift of violet, black cherry and cassis. The palate delivers strong and persistent flavours of spice, black pepper, cassis, dark chocolate and mocha. Excellent weight and depth. Fine dry tannins, perfect balance. Very long aftertaste of spice, blackcurrant and chocolate.
Other Reviews… The 2006 Cabernet Sauvignon Brookman Vineyard offers aromas of toast, pencil lead, spice box, licorice, black currant, and blackberry. This is followed by a fleshy Cabernet with gobs of flavor and excellent balance. The 2007 vintage in McLaren Vale experienced one of the worst droughts on record, requiring very judicious use of water. The vintage started 4 weeks early (which was another record for Gemtree), the quantity of fruit harvested was dramatically reduced which in turn produced a highly concentrated wine.
Opaque black crimson colour with purple hue, showing good cling to the glass. Excellent lifted nose of liquorice, spice, vanilla and plum. The palate flavours are generous, with spicy black and white pepper evident, followed by plum, spice, cedar and vanilla. Velvet tannins. Very spicy black pepper aftertaste.

The fruit for Barking Mad Shiraz is sourced from low yielding dry grown vines planted on Reilly’s elevated vineyard in Watervale. The fruit is hand picked and fermented in open vat fermenters.
Excellent everyday drinking!
Very deep black, purple colour with black purple hue – almost opaque. Top note of vanilla, blackberry and liquorice allsorts. The 2008 Pikes Riesling is an example of Clare Riesling approaching its brilliant best
Picked in late March - early April, the wine was inoculated with pure yeast culture and fermented entirely in stainless steel at between 12 and 15°C for 25 days. Brilliant pale straw colour with water like hue. Top note of lime and lemon followed by tropical fruit and orange blossom. The palate flavours are quite pronounced with the lemon and lime being dominant, over a crisp acid backbone. Orange infusions evident on the palate. Strong spice, lemon and lime aftertaste with crisp acid finish.
