The culprit was lead, innocently added in order to 'improve' the wine or counter its acidity. From this observation followed a cure for the deadly "Wine Disease" scourging much of Europe, and the development of some of the first consumer protection legislation. A fascinating account.

Maurice O'Shea - An Appraisal
