With a fragrance similar to liquorice or fennel, anise has been used to make liqueurs for centuries. Many ouzos rely on a particular species from Southern China – known as “fine star” or “Star Anise.” Probably the most noteworthy example of the style is produced by the French liqueur company “Marie Brizard.” Marie Brizard, who was born in 1714 inherited a secret formula for the production of anisette from a West Indian she had nursed back to health. Unfortunately, Marie Brizard’s products are not always readily available in Australia and liqueur enthusiasts often must wait long periods between shipments. This version from Baitz, however, represents excellent value and has an alcohol content of 22%.
