This wine is a blend of 95% Sauvignon Blanc and 5% Semillon. A number of techniques have been employed by the winemaking team in an effort to provide greater complexity and texture in this wine; fruit was sourced from 26 different vineyard blocks which were pressed and fermented separately. Approximately 40% of the final blend was fermented using wild yeast. The Semillon and approximately 10 percent of the Sauvignon Blanc were fermented in older French barriques.
Bright pale straw colour with a hint of green around the edges and water like hue. Lifted top note of green grassy herbaceous characters followed by ripe and unripe gooseberry with a touch of spice as an end note. The palate displays good weight with partial barrel fermentation imparting some additional texture. Herbaceous grassy
characters followed by ripe gooseberry and unripe passionfruit with a hint of pencil shavings. Clean crisp finish with aftertaste of ripe gooseberry, unripe passionfruit and green apple.
