This wine consists of a blend of 80% Shiraz and 20% Cabernet Sauvignon, produced from 30 year old Pyrenees vines and younger Heathcote vines. After fermentation the wine spent 18 months maturing in new French casks. Very deep crimson colour with brick red hue, showing signs of bottle age. Aroma of cedar, vanilla, confectionary and stewed plum – a refined sniff. The palate structure is sophisticated with flavours of refined confectionary, stewed fruit and very distinct blackpepper flavour. Very good length – the wine remains a little tight and is supported by long dry tannins followed by aftertaste of cedar and stewed fruit.
